Dans un bol, m\u00e9langer l\u2019huile d\u2019olive, les herbes de Provence, une pinc\u00e9e de sel et un tour de moulin \u00e0 poivre. Badigeonner le filet SWAP ou les tranches avec la marinade et laisser reposer 30 min au frais.<\/p>\n<p>2. Faire chauffer le four \u00e0 200\u00b0C. Laver et s\u00e9cher la patate douce (garder la peau si elle n\u2019est pas trait\u00e9e). Couper la patate douce en cubes et les placer dans un saladier. Arroser-les d\u2019huile d\u2019olive et ajouter le paprika, le cumin et le sel. M\u00e9langer pour bien enrober les cubes.<\/p>\n<p>3. Disposer les cubes de patate douce sur une plaque chemis\u00e9e de papier cuisson. Cuire pendant 20 \u00e0 25 min, en remuant \u00e0 mi-cuisson, jusqu\u2019\u00e0 ce que les cubes soient dor\u00e9s et bien tendres.<\/p>\n<p>4. Pr\u00e9parer la vinaigrette. M\u00e9langer tous les ingr\u00e9dients dans un petit bol, en fouettant pour \u00e9mulsionner la vinaigrette.<\/p>\n<p>5. Faire chauffer un filet d\u2019huile dans une po\u00eale \u00e0 feu moyen. D\u00e9poser le filet et faire griller environ 4 min de chaque c\u00f4t\u00e9, jusqu\u2019\u00e0 ce qu\u2019il soit bien dor\u00e9.<\/p>\n<p>6. Rincer les pousses d\u2019\u00e9pinard. Couper la pomme en tranches. Couper le filet SWAP grill\u00e9 en cubes.<\/p>\n<p>7. Dans une grande assiette creuse, m\u00e9langer les pousses d\u2019\u00e9pinard avec quelques cuill\u00e8res de vinaigrette. Garnir avec les cubes de filet SWAP, les tranches de pomme, la f\u00eata \u00e9miett\u00e9e, les noix de p\u00e9can et la grenade.
