Dans le bol d\u2019un mixeur plongeur, verser la cr\u00e8me de soja, le jus de citron, le vinaigre de cidre, la moutarde et le sel. Mixer pour \u00e9mulsionner.<\/p>\n<p>2. Tout en mixant, verser progressivement l\u2019huile en filet jusqu\u2019\u00e0 obtenir une mayonnaise soyeuse.<\/p>\n<p>3. Diviser la mayonnaise en 3 portions :<br \/>\n\u2022 Ajouter le concentr\u00e9 de tomate, le paprika fum\u00e9 et le piment dans la premi\u00e8re portion.<br \/>\n\u2022 Ajouter le jus de citron, la ciboulette, l\u2019ail et le zeste dans la deuxi\u00e8me portion.<br \/>\n\u2022 Ajouter la sauce soja, le sirop d\u2019\u00e9rable, le vinaigre et le gingembre dans la derni\u00e8re portion.<br \/>\n\u2022 Go\u00fbter et ajuster. Verser dans des ramequins et r\u00e9server au frais.<\/p>\n<p>4. Pr\u00e9parer les tenders :<br \/>\nDans une assiette, m\u00e9langer 100 g de farine de riz, le paprika, l\u2019ail en poudre, le curcuma, sel et poivre.<br \/>\nDans une deuxi\u00e8me assiette, m\u00e9langer 50 g de farine de riz, la sauce soja, le tabasco et l\u2019eau.<br \/>\nDans une troisi\u00e8me, m\u00e9langer la chapelure, les herbes de Provence et les graines de s\u00e9same.<\/p>\n<p>5. Couper les filets SWAP en bandes. Les tremper successivement dans la premi\u00e8re assiette, puis la deuxi\u00e8me, puis la troisi\u00e8me.<\/p>\n<p>6. Faire chauffer l\u2019huile \u00e0 160\u00b0C. Plonger les tenders et frire environ 3 min, jusqu\u2019\u00e0 ce qu\u2019ils soient bien dor\u00e9s. \u00c9goutter sur du papier absorbant.<\/p>\n<p>7.
