Pr\u00e9parer la mayonnaise truff\u00e9e : dans un r\u00e9cipient haut, mixer le lait de soja, le jus de citron et une pinc\u00e9e de sel. Une \u00e9mulsion se forme. Sans cesser de mixer, verser les huiles en filet jusqu\u2019\u00e0 obtenir une mayonnaise onctueuse. Poivrer au go\u00fbt.<\/p>\n<p>2. M\u00e9langer la mayonnaise avec le chou rouge r\u00e2p\u00e9. R\u00e9server au frais.<\/p>\n<p>3. Cuire les filets SWAP : faire chauffer un filet d\u2019huile dans une po\u00eale. Saisir les filets 4 min de chaque c\u00f4t\u00e9 \u00e0 feu moyen. Laisser ti\u00e9dir puis trancher finement dans la longueur ou en biais.<\/p>\n<p>4. Monter les mini-clubs : d\u00e9couper le pain de mie \u00e0 l\u2019emporte-pi\u00e8ce. \u00c9taler le coleslaw au chou rouge, ajouter quelques tranches de filet SWAP, de la roquette et les pousses d\u2019alfalfa.<\/p>\n<p>5.
