Saler. Badigeonner les filets SWAP et cuire 15 min \u00e0 180\u00b0C.<\/p>\n<p>2. <strong>Pur\u00e9e de patate douce r\u00f4tie :<\/strong> couper les patates douces, l\u2019oignon et l\u2019ail. Enrober d\u2019huile d\u2019olive. Cuire 25 min \u00e0 220\u00b0C. Mixer jusqu\u2019\u00e0 texture lisse. Rectifier l\u2019assaisonnement (ajouter la cannelle si souhait\u00e9).<\/p>\n<p>3. <strong>Choux de Bruxelles croquants \u00e0 la grenade :<\/strong> \u00e9mincer ou effeuiller les choux. M\u00e9langer avec les graines de grenade, l\u2019huile, le vinaigre, le sirop d\u2019\u00e9rable, la moutarde, le zeste et le sel. R\u00e9server.<\/p>\n<p>4. <strong>Sauce gravy v\u00e9g\u00e9tale :<\/strong> faire bouillir le bouillon avec l\u2019oignon, les champignons, le laurier et le thym 10 min. Retirer les herbes, ajouter le miso, la sauce soja et le sirop d\u2019\u00e9rable. Mixer et filtrer. Dans une casserole, faire fondre la margarine, ajouter la f\u00e9cule et m\u00e9langer jusqu\u2019\u00e0 l\u00e9g\u00e8re coloration. Verser le bouillon petit \u00e0 petit en fouettant.
