SWAP Chicken Salad Bowl

INGREDIENTS

Salad:

 

90g SWAP Chicken Diced
2 cups mixed lettuce
1 carrot, cut into ribbons
¼ red onion, thinly sliced
¼ cup olives, pitted & halved
½ cup cooked quinoa
½ cup cherry tomatoes, halved
½ cup diced tomatoes
Handful of mixed herbs
Lemon

Vinaigrette:

1/2 cup EVOO
3 tbsp red wine vinegar
1 tbsp Dijon

DIRECTIONS

  1. Put 2 cups of mixed lettuce in a salad bowl.
  2. Top with diced SWAP Chicken, carrot, olives, tomatoes, cucumber, cooked quinoa and red onion.
  3. Whisk all the vinaigrette ingredients together and drizzle, as needed, over the salad.
  4. Serve with a handful of chopped mixed herbs and a couple lemon wedges.
