INGREDIENTS
Salad:
90g SWAP Chicken Diced
2 cups mixed lettuce
1 carrot, cut into ribbons
¼ red onion, thinly sliced
¼ cup olives, pitted & halved
½ cup cooked quinoa
½ cup cherry tomatoes, halved
½ cup diced tomatoes
Handful of mixed herbs
Lemon
Vinaigrette:
1/2 cup EVOO
3 tbsp red wine vinegar
1 tbsp Dijon
DIRECTIONS
- Put 2 cups of mixed lettuce in a salad bowl.
- Top with diced SWAP Chicken, carrot, olives, tomatoes, cucumber, cooked quinoa and red onion.
- Whisk all the vinaigrette ingredients together and drizzle, as needed, over the salad.
- Serve with a handful of chopped mixed herbs and a couple lemon wedges.
